Ratatouille Shakshuka

Red onions50 g
Kirschtomatoes, quartered1 point of a knife
Coconut blossom sugar0 to taste

Raw potatoes, medium size4 tbsp.

Sauté onions and potatoes in a little olive oil in a pan.
Step 2/6
Then add everything one at a time, as listed, except for the eggs.
Step 3/6
Season to taste with the spices. Put a lid on the pan and simmer for 15 minutes over medium heat.

Carefully beat the eggs onto the vegetables. Replace the lid and let the eggs set to the desired consistency.

Sprinkle with parsley and serve.

Tip: A blob of natural yogurt tastes very good with it.
