Vegan cookies with plums

Vegan cookies with dried plums. Try our plum cookies — ideal for cozy Autumn afternoons.

Ingredients for
0.5 tbsp.
Cornflour
0.5 Tsp.
Cinnamon
0.5 Tsp.
Baking powder
0.25 Tsp.
Salt
150 g
Vegan butter, melted and cooled to room temperature
135 g
Panela
100 g
White sugar

Step 1/7

Line a baking tray with baking paper.

Step 2/7

Mix the flour, baking powder, salt and cinnamon together in a bowl.

Step 3/7

Now mix the vegan butter, panela and white sugar and apple sauce in a large bowl. Then add the seasoned flour, cornflour and baking powder and quickly mix everything together to form a smooth dough.

Step 4/7

Chop the plum pieces into large chunks and carefully fold them in until they are evenly distributed.

Step 5/7

Now leave the dough to rest in the fridge for approx. 20–30 minutes. In the meantime, you can preheat the oven to 180 degrees (fan oven).

Step 6/7

Now place about 1.5 tablespoons of dough per cookie for normal-sized cookies or 3 tablespoons of dough for large cookies on the baking tray. Then bake your cookies for 10–12 minutes or until the edges are lightly golden and firm. The centre should no longer look doughy, but if it is still soft, that's okay, as the biscuits will cool for about 10 minutes and then harden slightly.
