Vegan cookies with blueberries

Ingredients for
1 Pinch
Cinnamon
1 Pinch
Salt
1 UNIT
Vanilla bean
1 Tsp.
Baking soda
175 g
Wholemeal flour

Step 1/7

Mix flour, baking soda, salt, cinnamon and the pulp of a vanilla bean. Fold the dry ingredients into the wet.

Step 2/7

Mix in cocoa nibs.

Step 3/7

Preheat the oven to 175°C convection oven.

Step 4/7

Form ping pong ball sized balls from the dough and place them on a baking sheet lined with parchment paper.

Step 5/7

Spread dried blueberries over cookies and press down lightly.

Step 6/7

Bake for 15 minutes until cookies are golden brown.

Step 7/7

Let cool and enjoy!
