Chickpea curry with couscous

A super delicious savory couscous recipe for you, this time with couscous! A good curry always comes good, especially if it can be prepared quickly and easily. The re-cooking is worth it in any case!

Ingredients for

Tomatoes, chopped
1 Pinch
Pepper
1 Pinch
Salt
3 Tsp.
curry powder
1
Onion
0 to taste
Dried tomatoes

Step 1/10

Peel the onion and cut into small pieces.

Step 2/10

Heat the oil in a non-stick frying pan and sauté the onion.

Step 3/10

Add the curry powder and mix it well with the onions.

Step 4/10

Deglaze the curry onions with canned tomatoes, optionally chop dried tomatoes and add.

Step 5/10

Add the chickpeas to the pan and simmer everything on medium for about 10 minutes.

Step 6/10

Bring one cup of water to a boil in a small saucepan.

Step 7/10

Add salt and couscous, turn off the heat and let the couscous swell in the hot water for 5 minutes.

Step 8/10

Add the coconut milk to the curry and turn off the heat.

Step 9/10

Season with salt and pepper and serve with the couscous.

Step 10/10

Garnish the finished dish with feta cheese, fresh tomatoes and cilantro.
