Vegan kumpir with "bacon"

The luxury vegan baked potato: kumpir with vegan bacon, a creamy filling and pesto on top! Taste it now!

Ingredients for
3 Units
Floury cooking potato
3 tbsp.
Vegan butter
3 tbsp.
Vegan sour cream
1 heaped tbs.
Chives, finely chopped
2 Pinch
Salt and pepper

Step 1/9

Wash the potatoes thoroughly and prick them several times with a fork. Place them on a baking tray and bake at 200°C (top/bottom heat) for about 60-70 minutes until they are soft.

Step 2/9

Remove the baked potatoes from the oven and let them cool slightly.

Step 3/9

Make a lengthwise cut in the potatoes and carefully scrape out the inside with a spoon. Leave the bottom edge so that the potato remains stable.

Step 4/9

Put the scooped-out potato inside in a bowl.

Step 5/9

Stir in vegan butter and yeast flakes until creamy. Season with salt and pepper to taste.

Step 6/9

Put the potato mixture back into the hollowed-out potatoes.

Step 7/9

Garnish the filled potatoes with the bacon bits, gherkins and chives.

Step 8/9

Top each potato with a dollop of pesto and a spoonful of vegan sour cream.

Step 9/9

Add a sprinkling of pepper and more chives if you like.
