High fiber oatmeal cookies

A quick oatmeal cookie recipe for you. Since they can be snacked incredibly well on the go or in the office, we are absolutely thrilled with them. The combination of oats and dried fruit is super crunchy - perfect for the next snack break!

Ingredients for
100 ml
Water
300 g
Oatmeal
80 g
soft margarine
90 g
Dates
0 to taste
Coconut Blossom Syrup
1 Tsp.
Baking powder

Eggs

Step 1/10

Preheat the oven to 180 degrees convection.

Step 2/10

Soak the flax seeds in water until they have absorbed the water.

Step 3/10

Mix all dry ingredients - i.e. flours, baking powder, coconut blossom sugar, salt.

Step 4/10

Either process the dried fruit with 3 tablespoons of oat flour in a chopper (the flour will keep the pieces from sticking together) or chop them very small by hand.

Step 5/10

Add the chopped dried fruit to the flour mixture and mix with them.

Step 6/10

Add flaxseed, eggs and the margarine to the flour mixture.

Step 7/10

Mix everything together with the dough hook of the hand mixer.

Step 8/10

Spread the dough in batches on a baking sheet lined with baking paper.

Step 9/10

If desired, sweeten with a little coconut syrup.

Step 10/10

Put the tray in the oven and bake for 20-30 minutes until the cookies are firm. Attention, they still dry a little after baking, so do not bake too crispy.
