Minestrone-Salat

Preparation time:

15 minutes

A colorful salad reminiscent of the Italian classic minestrone.

Ingredients for
1 Pinch
Pepper (ground)
2 UNIT
Carrots
3 tbsp.
Olive oil
2 Tsp.
Dijon mustard
250 g
Beans
0.5 Tsp.
Salt
1 tbsp.
Balsamicessig
450 g
Tomaten

Step 1/9

Mix all the ingredients for the dressing in a jar and set aside.

Step 2/9

Wash tomatoes, carrots and green beans.

Step 3/9

Cut the tomatoes into small cubes, peel the carrots, quarter them lengthwise and cut them into thin slices.

Step 4/9

Cut the beans in half.

Step 5/9

Place the green beans in a pot of hot water and blanch for about 1 minute.

Step 6/9

Add the carrots and cook for another minute.

Step 7/9

Drain and rinse with cold water.

Step 8/9

Mix beans, carrots, chickpeas and tomatoes in a large bowl and pour dressing over them.

Step 9/9

Allow to infuse a little before consumption.
