Oil free basil walnut pesto

400 g
Broccoli, cooked (frozen or fresh)180 g
Walnut kernel15 g
Salt70 ml
Water or unsweetened vegetable drink1
Lemon juice160 g
Basil (frozen or fresh)70 g
Yeast flakes4 cloves
Garlic cloves (according to taste)Step 1/3
Steam or stew the broccoli for a few minutes. It should not become too soft in the process.

Blend broccoli, walnut kernels, basil, garlic, water/vegetable drink, yeast flakes, salt, and lemon juice in blender until creamy pesto forms; use pestle to help if necessary.

Recommendation: Bottle the pesto in a few jars and freeze some to always have some on hand.
