Vegan onion tart

Preparation time:

40 minutes

If you're tired of all the sweet cakes, try this vegan onion tart with tofu.

Ingredients for
1 dice
Yeast
2 tbsp.
Warm water
260 g
Flour
1.5 Tsp.
Salt
150 ml
Oat drink
500 g
Peeled onions
3 tbsp.
Cashewmus
550 g
Soy yogurt
2 Pinches
Pepper
2 Pinches
Basil
2 Pinches
Chives
400 g
smoked tofu

Step 1/10

For the dough: Mix 1 cube of yeast, 2 tablespoons of warm water and 1 teaspoon of date syrup and leave to stand for 5-10 minutes.

Step 2/10

Then knead with 250 g flour, 50 g soy yogurt, 1 teaspoon salt and 150 ml oat drink for 7-8 minutes.

Step 3/10

Shape the dough into a ball and cover with flour. Cover and leave to rest for about 30-60 minutes until it has doubled in size.

Step 4/10

For the topping: Cut the onions into thin rings and fry in a little oil until translucent, then thicken with 1 tbsp flour.

Step 5/10

Cut the tofu into cubes and fry as well.

Step 6/10

Mix the remaining ingredients such as 500 g soy yogurt, 50 g yeast flakes, 3 tbsp cashew butter, 2 pinches each of salt and pepper and herbs in a bowl. Now add the fried tofu and onions.

Step 7/10

Roll out the dough into a 36 cm circle on a floured work surface. Grease a 26 cm diameter tin or baking ring and line with the pastry, leaving a 5 cm border.

Step 8/10

Leave the dough to rise in the tin for another 30 minutes.

Step 9/10

Then pour in the filling and sprinkle with a few yeast flakes.

Step 10/10

Now bake the cake at 200 °C top/bottom heat for about 35-40 minutes.
