Veggie Peanut Stir Fry

If you have some rice left over from the day before, you can use it for this delicious recipe. In combination with some tofu and fresh vegetables, you can conjure up a real delicacy.

Ingredients for
1 Pinch
Salt and pepper
3
Carrots
200 g
Tofu
2 tbsp.
Water
1 Tsp.
Soy sauce
1 Stick
Leeks
2
Spring onions
0 as necessary
Whole grain rice
1
Pointed peppers
2 UNIT
Garlic cloves
2 handful
Rotkohl
1 handful
Peanuts
1 Tsp.
Garlic granules

Step 1/7

For the peanut sauce: For this, mix 1 tbsp peanut butter, 1 tsp soy sauce, 1 tsp maple syrup, 2 tbsp water, handful of peanuts, pinch of salt, pepper and garlic granules.

Step 2/7

Peel and chop the carrots and roast them in a pan with coconut oil.

Step 3/7

Slice the tofu and add.

Step 4/7

Add chopped peppers and crushed garlic cloves and sauté for about 5-10 minutes.

Step 5/7

Add remaining ingredients to pan and season to taste.

Step 6/7

Pour Veggie Stir fry into a bowl and serve with the peanuts and sauce.
