Quinoa bowl with smoked tofu

Preparation time:

15 minutes

Convince yourself of the taste experience of däftigem smoked tofu, fresh vegetables and fine nutty tasting quinoa.

Ingredients for

Öl

Sesam
160 g
Quinoa
5 tbsp.
Yogurt
0 to taste
Pepper
0 to taste
Salt
1 Tsp.
paprika powder

Zucchini
1 Tsp.
Essig
0 to taste
Thymian

red onion
1 Tsp.
Tahini

Step 1/6

First, rinse the quinoa in a sieve. Then bring to a boil with 2 ½ times the amount of water and simmer for about 15 minutes.

Step 2/6

Peel the onion, halve and cut into rings. Dice the zucchini and mushrooms. Heat some oil in a pan over medium heat and fry the onion, zucchini and mushrooms briefly.

Step 3/6

Dice the smoked tofu. Heat oil in a second pan and fry the tofu cubes as well.

Step 4/6

Add the cooked quinoa to the onion, zucchini and mushrooms. Mix everything well and sauté together for about 2 minutes. Season with salt, pepper and paprika powder.

Step 5/6

In a small bowl, whisk together yogurt, vinegar, and a little salt and pepper to make a sauce.

Step 6/6

Divide the quinoa mixture between two bowls. Spread the tofu cubes on top and decorate with the yogurt sauce, sesame seeds, tahini and thyme.
