What are the varieties of gingerbread?

A basic distinction is made between brown gingerbread and wafer gingerbread. Brown gingerbread is baked from kneadable dough with a relatively high flour content. These include, for example, pepper nuts, gingerbread men, spitzkuchen or our gingerbread hearts. Wafer gingerbreads have a softer consistency. This is due to the fact that they are made from a low-flour or flour-free mass and are sprinkled onto wafers.

What is the difference between gingerbread and gingerbread?

Both terms mean the same pastry. In the east of Germany they speak of gingerbread, this is also where Pulsnitz gingerbread comes from. The name comes from the Middle Ages. At that time all foreign spices were summarized under the term pepper. However, there is no real pepper in the pastry. In southern Germany, the term gingerbread is used instead. The gingerbread center of Nuremberg is best known for fine Nuremberg Elisen gingerbread. In every region, gingerbread is made, spiced and shaped a little differently.
